Harvest
A few years after planting the olives, we had our first harvest. To be honest, they were very modest vintages. From the first moment, we knew that in the oil mill where we process our olives, we wanted to get oil exclusively from them – from our olives. We started in 2009 with 88 kg of olives and the first (OUR!) 12.5 liters of oil.
We have found an oil mill with which we are satisfied, which gives us the product we want and which we think our customers deserve.
Today, our harvest has grown. Depending on the year, we pick olives by hand for 4 to 5 days, but we have one important rule: What we picked during the day is processed in the oil mill the same night, so that in the morning we have freshly obtained olive oil. From harvesting to processing, it never takes more than 12-16 hours. Immediately after receiving the oil, we pour it into stainless steel barrels, where it is slightly clarified and waits for its turn to be filled into bottles.
We give the oil from each harvest for analysis and evaluation to an authorized institution for analysis. Each time we received proof that it is only and exclusively extra virgin oil. We are also constantly told that it is a harmonious oil with intense spiciness, medium bitterness and medium green fruitiness. This rating is determined by the variety of olives, the location of the olive groves and the time of harvest.
